2010 CABERNET SAUVIGNON
Wonderfully rich notes of dark chocolate define the aroma of this wine. Notes of bay leaf and wild fennel, with cedar, currants and powdery tannins are found throughout the generous, yet elegant palate. Showing structural density, the firm, fruit tannin and subtle wood tannin create wonderful drive from beginning to end. The wholly natural acidity and approachable tannic qualities ensure excellent persistence. Screw cap.
As usual, each individual block was separately picked and fermented in open fermenters. A short, cold soak was carried out prior to fermentation with neutral yeast. The wines were then pressed to tank to settle and undergo secondary fermentation prior to being racked to barrel. No additions. Not stabilised or fined. Coarse Filtered at bottling. 2 years in French Oak. Bottled in September 2012 under screw cap. $50 |
