2011 CABERNET MERLOT
Luscious wafts of boysenberries, baking spices and blood plums are the alluring introduction to this lively, fruit driven wine. Feminine, subtle oak nuances are well integrated on the soft palate, complementing the fruit and enhancing the gentle spiced notes throughout. The balanced, mouth-filling palate is brought in to focus with bright, refreshing acidity and a taut edge of mineral refinement, lending an excellent persistence to the finish. Delicious drinking.

60% Cabernet Sauvignon / 20% Cabernet Franc and 20% Merlot.
All our red grapes are handled in a similar manner. The fruit is hand-picked and de-stemmed and small parcels of must are left to macerate in order to allow fermentation to begin naturally, during which time it is hand plunged regularly. A proportion is given extended maceration and a further portion barrel fermented before being gently pressed and aged in a variety of new and old French oak barriques. Malolactic fermentation occurs naturally in Springtime and the wine is coarse-filtered immediately prior to bottling.
