2012 CIELO - Sold Out
In spite of our continued enjoyment in making and drinking our traditional Sauvignon Blanc/Semillon blend, we thought a slight change of pace was timely for a proportion of the fruit. Cielo translates as sky or heaven in Spanish, reflecting Belinda’s many years making wine in northern Spain.
The wine consists of 100% barrel-fermented Sauvignon Blanc, fermented with naturally occurring yeasts in predominantly old oak. The small percentage of new wood used, is in the form of a “cigar shaped” cask, which is made longer and slimmer than a traditional barrique in order to increase and enhance lees contact. The wine is aged on lees for approximately 12 months before blending to tank for settling, prior to bottling in September. After a rather nail biting wait to see how the 1st edition of this wine would evolve in bottle, we are delighted to release a wine we think is drinking superbly now, although will undoubtedly mature and continue to excite well into the future. 2012 CIELO – New Release Delicate oyster shell aromas coupled with notes of river stone and a slight peaty character are the forerunners of this delicious creation. The palate is texturally layered with nuances of soft, subtle wood seamlessly integrating with delicate stone fruit characters and saline, chalky notes. This fine palate is balanced by carefully finessed lees and oak treatment with poised, linear acidity and a long, persistent finish. 100% Sauvignon Blanc Screwcap $29 |
