2013 CABERNET MERLOT
Leading with aromas of red berry fruit, liquorice, bay leaf and chocolate, this wine is starting to blossom. Warm and refined, the palate is soft and supple, with elements of baking spices and ripe blackberry throughout the palate. Subtly integrated wood and vibrant fruit form a solid foundation for the balanced, natural acidity and excellent persistence.
$32 Screwcap 1 year in French Oak 60% Cabernet Sauvignon / 20% Cabernet Franc and 20% Merlot. All our red grapes are handled in a similar manner. The fruit is hand-picked and de-stemmed and small parcels of must are left to macerate in order to allow fermentation to begin naturally, during which time it is hand plunged regularly. A proportion is given extended maceration and a further portion barrel fermented before being gently pressed and aged in a variety of new and old French oak barriques. Malolactic fermentation occurs naturally in Springtime and the wine is coarse-filtered immediately prior to bottling. |
