2014 CABERNET MERLOT
Black cherry and red fruits introduce this bright, fresh wine. These notes follow on the palate, mingled with dark berry overtones, bay leaf and spice. Soft, integrated wood tannins couple with firm fruit tannin, enhancing the layered spice and complexity. Round and generous.

The fruit is hand-picked and de-stemmed and small parcels of must are left to macerate in order to allow fermentation to begin naturally, during which time it is hand plunged regularly. A proportion is given extended maceration and a further portion barrel fermented before being gently pressed and aged in a variety of new and old French oak barriques. Malolactic fermentation occurs naturally in Springtime and the wine is coarse-filtered immediately prior to bottling. |
