2014 CABERNET SAUVIGNON
Mulberry and Morello cherry make up most of the fruit spectrum here, which is overlayed with baking spice and delicate anise notes together with rich, baked blood plums. The wine shows significant palate weight, yet has a lightness of touch throughout, with silky but firm tannins supporting the aromatic, medium bodied frame. The judicious use of 100% French oak goes hand in hand with this frame, enhancing layers of spice, liquorice and fruit. All of these components combine to create an elegant shape, harmonious balance and soft, supple finish. A pleasure to drink.
Diam closure. $52 As usual, each individual block was separately hand picked and fermented in open fermenters. De-stemmed only (no crush). 5-7 day cold soak was carried out prior to fermentation with neutral yeast. The wines were then pressed to tank and settled prior to being racked to barrel for malolactic fermentation. 20% of this Cabernet was left in the fermentation vessel and sealed for a period of extended maceration of 4 weeks prior to pressing. No additions. No added acid, not fined or cold stabilised. Coarse filtered to bottle. Tartrates may have settled, which is a natural and normal process. 2 years in French Oak.
