2015 CABERNET SAUVIGNON
Intensely perfumed with cherries, dark plum, mulberry, spices and dark chocolate, this wine is captivating from the outset. The red & black fruits shine throughout the palate and it is balanced with elegant, fine tannins and complimentary oak. The graphite-like quality of the ironstone that these vines have their roots in is evident along with the other mineral elements so often seen in our wines. Wonderfully even and long, the natural acidity lends balance and terrific persistence. It will surely continue to develop well in bottle and will benefit from decanting in the early years of its life.
Diam closure. $58 As usual, each individual block was separately hand picked and fermented in open fermenters. De-stemmed only (no crush). 5-8 day cold soak was carried out prior to fermentation with neutral yeast. The wines were then pressed to tank and settled prior to being racked to barrel for malolactic fermentation. 35% of this Cabernet was left in the fermentation vessel and sealed for a period of extended maceration of 8 weeks prior to pressing. No additions. No added acid, not fined or cold stabilised. Coarse filtered to bottle. Tartrates may have settled, which is a natural and normal process. 2 years in French Oak - mostly old. Bottled in September 2017. |
