2016 CABERNET SAUVIGNON
There is a beautiful dark fruit spectrum to this wine, starting with blood plum and moving through to liquorice and cassis. The palate offers great complexity, weight and texture. It delivers dark fruits, as seen on the nose, while unravelling to display more complex flavours of dried florals, graphite, cedar and bay leaf. The concentration of the year is evident throughout the wine, with the natural acidity lending definition and finishing with terrific persistence. Diam closure.
As usual, each individual block was separately hand picked and fermented in open fermenters. De-stemmed only (no crush). 5-8 day cold soak was carried out prior to fermentation. The wines were then pressed to tank and settled prior to being racked to barrel for malolactic fermentation. 25% of this Cabernet was left in the fermentation vessel and sealed for a period of extended maceration of 8 weeks prior to pressing. No additions. No added acid, not fined or cold stabilised. Coarse filtered to bottle. Tartrates may have settled, which is a natural and normal process. 2 years in French Oak - mostly old. Bottled in October 2018.
