For the first time, a blend of 70% Cabernet Sauvignon and 30% Semillon. As usual the Cabernet portion is crushed to press, soaked for 8-10 hours and fermented in stainless steel. The Semillon portion is 100% whole bunch pressed and both are fermented to dryness.
We aimed to make a slightly lighter style in both colour and weight than our previous few years, though equally delicious and undeniably Crawford River. Strawberries and redcurrant are found on the nose together with bright, red cherry. The wine has a small percentage of Semillon to add finesse, length and extra drinkability. A fine, saline quality is found throughout the palate, coupled with chalky texture and soft acidity.
